Cibulove Subzi / Onion subzi

Takto upravena cibula sa velmi dobre hodi k prazenym plackam Puri, ale mozete si k nej dat aj zdravsie Chapati. Ja tomuto hovorim "ranajky chudobnych". Subzi je z lacnych surovin, ale aj napriek tomu chuti vyborne. Casto ho dostat na ulici ako poulicne ranajky za par rupii.


Cibulove subzi



CO POTREBUJETE:

1/4kg cervenej cibule, pokrajanej na polkolieska / 1/4kg of red onion
1 lyzica Ghee / 1tbsp of ghee
1/4 lyzicky horcicneho semienka / 1/4tsp of mustard seeds
1/2 lyzicky Urad dal / 1/2tsp of urid dal
1/2 lyzicky Channa dal / 1/2tsp of channa dal
1 zelena chilli papricka / 1 green chilli
niekolko kari listockov / few curry leaves
1/4 lyzicky mletej kurkumy / 1/4tsp of termaric
sol / salt
50ml vody / 50ml of water

2 lyzicky cicerovej muky Besan / 2tsp of bengal gram flour Besan
trocha vody na rozmiesanie Besanu / little water to stir with besan

AKO POSTUPOVAT:

Cibulu si nakrajame na polkolieska. / Cut the onion.

V hrnci zohrejeme ghee. Pridame horcicne semienko, Urad dal a Channa dal a na silnom ohni ich nechame prazim, az kym nezacnu praskat. Potom ohen zmiernime a pridame kari listocky a chilli papricku (ak chcete viac palive, chilli papricku si pokrajajte nadrobno). Chvilku prazime, kym kari listocky celkom dopraskaju. Potom pridame kurkumu a premiesame. Dalej pridame nakrajanu cibulu a premiesame. / In the pot heat the ghee. Add mustard seeds, urid dal and channa dal and fry them on high heat until they pop up. Then reduce the heat, add curry leaves and cgreen chilli. For for a minute. Then add termaric and stir well. Add cut onion and stir.

Osolime a podlejeme 50ml vody. Hrniec zakryjeme a na miernom ohni cibulu varime 10-15 minut. / Add salt, 50ml of water, cover the pot and cook onion on low heat for 10-15 minutes.

Zatial si v miske rozmiesame Besan s trochou vody. Ked je cibula makka, Besanovu vodu do nej vylejeme a dobre premiesame. Prehrievame na miernom ohni dalsie 2 minuty, za obcasneho premiesania. / While onion is being cooked put the besan and little bit of water into the bowl and stir well. You don't want any lumps in it. When onion is tender add the besan water and stir well, cook on low heat for 2 minutes. Serve with flat breads like Puri or Chapati.
