Kasmirske Pulao / Kashmiri pulao

CO POTREBUJETE:

2 pohare ryze Basmati / 2 cups of basmati rice
vodu na namacanie / water to soak the rice

1 lyzica ghee / 1tbsp of ghee
1 lyzicka tmavej rimskej rasce / 1tsp of black cumin (shah jeera)
3ks klincekov / 3 cloves
2 kusy hnedeho kardamonu / 2 brown cardamom pods
3 kusy zeleneho kardamonu / 3 green cardamom pods
kusok skorice / small piece of cinnamon
1 azijsky bobkovy list (tej patta)  / 1 asian bay leaf (tej patta)
1/2 lyzicky cesnakovo - zazvorovej pasty / 1/2tsp gignger-garlic paste
sol / salt
voda podla potreby / water

2 velke cervene cibule / 2 big red onions
niekolko kesu orechov / few cashew nuts
niekolko mandli / few almonds
olej / oil

AKO POSTUPOVAT:

Ryzu preplachneme a nechame namocenu 10 minut. / Wash the rice and soak for 10 minutes in water.

V hrnci zohrejeme ghee, pridame rimsku rascu, skoricu, klinceky, oba druhy kardamonu, bobkovy list a restujeme, kym koreniny nezavonaju. Potom pridame cesnakovo-zazvorovu pastu a restujeme, aby jej typicka vona zmizla.  / Heat ghee in the pot, add cumin, cinnamon, cloves and both types of cardamom pods, bay leaf and fry until spices release its aroma. Then add ginger-garlic paste and fry until its typical aroma disappears.

Dalej pridame scedenu ryzu a chvilku na miernejsom ohni restujeme. Ryzu zalejeme vodou asi tolko, aby bolo hladina vody 1cm nad ryzou. Osolime, vodu privedieme do varu, ohen zmiernime a pod pokrievkou ryzu varime, kym sa voda nevyvari. Asi 10 minut. Potom ohen vypneme a ryzu pod pokrievkou nechame dorobit. / Add drained rice and fry for a minute. Add water, water level should be 1cm above the rice. Add salt and bring water to boil. Reduce the heat and cook rice, covered until all the water is absorbed. It will take about 10 minutes. Then remove pot from the heat and let the rice rest, covered.

Kym sa nam robi ryza v druhom hrnci zohrejeme trocha oleja, pridame na pasiky nakrajanu cibulu a troska soli a na stredne silnom ohni opekame cibulu dohneda. Opecenu odlozime bokom. V tom istom hrnci opecieme dohneda aj orechy a odlozime bokom.  / Heat some oil in other pot. Add sliced onion and pinch of salt and fry on medium heat until onion turns brown. Keep aside. In the same pot fry all nuts and keep aside.

Nakoniec cibulu aj orechy zamiesame do hotovej ryze. / When rice is ready add fried onion and nuts and stir.

Podavame ako prilohu alebo ako samostatne jedlo s papadmi a raitou. Na taneri si pulao mozeme posypat zrnkami granatoveho jablka. / Serve with papads and raita. You can sprinkle some pomegranate seeds over your pulao.
